台灣可可的故事 你知道台灣也有可可農場嗎?如果你的答案是「不知道」,那就讓我們一起來探索台灣的可可世界吧! 搭上台鐵列車,接著地方的公車一路前往台灣南部的屏東,映入眼簾的是香蕉園、檳榔樹、椰子樹,以及讓人瞬間感受到率真奔放的南島熱帶高溫! 台灣第一棵可可樹 早在1937年,台灣仍處於日治時期時,日本知名糖果公司森永創辦人——森永太一郎,曾在屏東試種印尼品種的可可樹。不幸的是,隨著第二次世界大戰爆發,這項計畫中斷了。 一直到2000年代初期,屏東的農民重新開始種植,終於成功培育出適應高溫濕熱氣候的可可樹。 那麼,台灣可可有什麼特別之處呢? 在台灣屏東,你會看到全球最短的可可產地到巧克力製作過程!我們今年走訪當地的可可農場時,看見整片可可果園錯落在鄉間地景中。新鮮採收的可可豆放進覆蓋香蕉葉的木桶中發酵,再攤放在高架架子上日曬乾燥。接著,分級、烘焙與研磨的過程,全部都在可可果園隔壁的工作坊完成。 這是一個建立在永續發展理念上的產業,致力於打造對環境友善、對農民友善的工作模式。 台灣的巧克力職人們多半採用「樹到巧克力(tree-to-bar)」或 「可可可豆到巧克力 (bean-to-bar)」的方式,與可可農合作緊密,有些甚至自己種植可可樹,從源頭守護品質與風味!
